Defrost the pasta (to speed up this process, you can also steam or rinse the pasta under running cold water). Place the pasta in a large bowl and cover lemon juice and oil all over it. Mix well, season to taste and add the cucumber, red pepper, radishes, onion and chopped chives and mix again. Arrange everything in a bowl and garnish with the crumbled feta cheese, mint and cherry tomatoes.
Tip
it is possible to prepare this recipe in the cold online. Place the frozen pasta in a dish with the filling on top without mixing (do not add the chives to avoid ‘burning’ by the cold). Cover and let thaw in a cold room. Once thawed, pour in the lemon juice and oil and mix thoroughly.
