Can I simply heat your doypacks of sauce in a kettle of boiling water during an event?

That is perfectly possible! Many caterers do not have a microwave available, but work on gas fires. With a kettle of water with closed pouches of sauce onto a fire, you can perfectly add warm sauces to your bain-marie throughout the entire day. But make sure that the pouches do not directly touch the bottom of the kettle: after all, it is in direct contact with the heating source (electric cooking plate, gas fire, induction) so that your bags would melt due to the extreme heat on the bottom.

Do you have a lot of vegetarian sauces?
Your puttanesca sauce is not a real puttanesca, because it doesn't contain the most characteristic ingredients (anchovies and capers)?
